NO BAKE Apple Pie

4 c. sliced, peeled apples, 4 med.
1 1/2 c. water
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1 tbsp. butter
1 pkg. (3 oz.) Jello brand peach flavor gelatin
1 pkg. (4 serving size) Jello brand vanilla flavor pudding & pie filling
1 frozen (9 inch) deep dish pie shell, baked & cooled

Combine apples, water, spices, butter and bring to boil; reduce heat, simmer and stir 5 minutes. Stir in gelatin, then pie filling mix. Bring to a full boil, remove from heat. Let stand 5 minutes. Pour into shell. Chill until set, about 3 to 4 hours.

CRUMB TOPPING:
Combine 1/2 cup graham cracker crumbs, 1 tablespoon sugar and 2 tablespoons melted butter. Sprinkle over pie before chilling.

NO-BAKE Pumpkin Pie


Ingredients:

Pre-baked pie crust- 9 inches
1 jar vanilla frosting(like cream cheese)
1 cup low-fat sour cream
1 cup canned pumpkin
1 tbsp cinnamon
1 tsp ground ginger
1/4 tsp allspice
3 cups of light Cool Whip or whipped cream

Directions:

1. In a large bowl mix the frosting, sour cream, pumpkin, cinnamon, ginger, and the allspice together. Stir well. Fold in the cool whip. Chill for 4-6 hours or overnight. Yummy.

02.03.11 Dinner

Another C recipe straight from my cupboards... :-)

Chriez wanted to eat anything fish based. We trotted to the local market, yet again and skimmed through the aisle of the fish section. I couldn't find any vendor with blue marlin to use so I settled for the big galunggong fish they had to offer and filleted them at home. Boiled them fish and added milk, pineapple, pechay and secret seasonings to add flavor to compliment the aroma. :-)

Dinner 02.02.11S

"Cooked from the heart".  Here is what I whipped up for our dinner. Serves a good 6-8 people dish but I had fed five heads with it and it was gone in a matter of minutes. Just used onions, garlic, tomatoes, mustard leaves and pechay. Believe it or not, I didn't use any salt to season it but I guess it was pretty tasty. Always throw in the vegetables last depending how crunchy or chewable you want them.

Today Begins

I will start another blog for all the dishes I've been making, will be making and other places we've tried eating at. Reviews maybe, why not. But I would like to venture into this. I don't know where it will be heading, but at least it started somewhere. And it begins, today.

No Bake Cheesecake Recipe

Ingredients

1-1/2 cups Semi-Sweet Chocolate Chips
1 (8 ounces) package Cream Cheese, softened
1 (3 ounces) package Cream Cheese, softened
1/2 cup Sugar
1/4 cup (1/2 stick) Butter or Margarine, softened
2 cups Frozen Non-Dairy Whipped Topping, thawed
1 packaged Graham Cracker Crumb Crust (6 ounces)

Preparation:

Place chocolate chips in small microwave-safe bowl. Microwave at HIGH (100%) 1 minute; stir. If necessary, microwave at HIGH an additional 15 seconds at a time, stirring after each heating, just until chips are melted when stirred. Set aside to cool.
Beat cream cheese, sugar and butter in large bowl on medium speed of mixer until creamy. Gradually add melted chips, beating on low speed until blended. Fold in whipped topping until blended; spoon into crust.
Refrigerate until firm. Garnish as desired.
